The delegate of culture, tourism, and sports, Marta Rivera de la Cruz, participated this morning in a demonstration of the process of making the traditional donuts in Santo, organized at the Patisheries and Kitchen School in Viena Capells. The activity is part of the Municipal Council’s program to celebrate the festivities of San Isidro and to evaluate one of the most representative products of Madrid’s bakery.
Rivera de Cruz emphasized that «people in Madrid enjoy these sweets that are eaten throughout the year, especially during San Isidro.» She also emphasized that «this year it is expected to sell more than six million units of donuts,» a figure that reflects the popularity and significance of this tradition.
With centuries of history behind them and legends like that of the mythical Aunt Javiera, the holy donuts, in their different versions stupid, Santa Clara, and French, are part of Madrid’s gastronomic heritage. During the demonstration, she also presented the process of making the Jubilee Rosquilla, a recent addition to this tradition of Rompostera, created by bakers in Madrid on the occasion of the Jubilee year.
